Ingredients

250 ml water

300 g sugar

1 packet vanilla sugar

1 tsp cinnamon (optional)

1 pinch of salt

Currently unavailable500 g almonds (preferably Lemke Mampfmandeln)
Method:
Bring the water to a boil in a pan.
Meanwhile, mix the sugar with the vanilla sugar and cinnamon.
Once the water is boiling, stir the sugar-cinnamon mixture into the boiling water.
Let it simmer briefly until it develops a light syrup-like consistency.
Now add the almonds.
Continue cooking the mixture over medium heat, stirring occasionally so the syrup does not burn.
The mixture will become thick and glossy. Now be careful — it only takes a moment before the sugar starts to crystallize again.
You’ll recognize this by the typical texture of candied almonds, their whitish appearance, and the crystallized sugar coating.
Transfer the almonds to a baking tray lined with parchment paper and leave them to cool.
The sugar will still be very hot, so don’t burn your mouth while sneaking a taste!
Tipp:
If you’re not using Lemke Mampfmandeln, roast the almonds in the oven for 15 minutes beforehand. This gives the candied almonds an even richer flavor.
