The Best Apple Varieties for Baking
What matters?
For baking, apples that retain their flavor and do not completely fall apart are best. They should have a good balance of sweetness and acidity – this keeps the pastry from becoming boringly sweet and gives it a lovely fruity flavor.
If you also always wonder which apples are best for baking, here is our recommendation:
The Best Apple Varieties
Elstar
Very popular for baking. Juicy, slightly tart, and aromatic – perfect for cinnamon rolls, cakes, and strudel.
Boskoop
Strongly tart and intense in flavor. Ideal if you want a pronounced apple flavor, especially good in combination with sweet marzipan.
Braeburn
Stays nicely firm when baked, pleasantly sweet and tart, and ideal for apple-cinnamon pastries.
Jonagold
Mild, juicy, and slightly sweet. Perfect if you prefer something less tart.
Cox Orange
Very aromatic, slightly spicy, and excellent for delicate baking recipes.
Less Suitable Varieties
Very mealy varieties such as Golden Delicious break down quickly and become more like a purée – therefore they are less ideal for cinnamon rolls with apple pieces.
Tips and Tricks
Tip for Marzipan Cinnamon Rolls
Combine a tart variety, such as Boskoop, with a milder one, such as Jonagold. This gives you greater depth of flavor and the perfect balance with the sweet marzipan filling.
